What is a AMF file?
AMF is an XML format standardised as ISO/ASTM 52915 as an intended successor to STL. It supports units, colors, materials and curved triangles. Adoption stayed limited and most of the industry moved on to 3MF, but slicers still accept AMF files.
Commonly used by: older slicers, ASTM / ISO 52915 workflows

What is a PLY file?
PLY was designed at Stanford to store 3D scanner output. It supports per-vertex colors and arbitrary custom properties, in either ASCII or binary encoding, which is why scanning and photogrammetry software prefers it over STL.
Commonly used by: 3D scanners, photogrammetry (Meshroom, RealityCapture), MeshLab, research tools
